I thought about volunteering at Rallye Defi, is being an anglophone while volunteering at this event an issue ?

I don't think it is. The volunteer recruiters, Kevin and Jennifer, can help with placement. Check out this post on the MCO Rally forum:

Email them with any questions you may have.

I have worked at various Quebec events as a regular worker and also with the RSO timing team and I have had no major issues as of yet.
Everybody is there to enjoy the rally and on numerous occasions workers as well as spectators have apologized to me for not being able to speak English very well when we are trying to talk to each other.
I think the organizers are aware that they do sometimes have only English speaking workers and they tend to make sure they put them with either people who are Bilingual or with a team that speaks English.
